I don't want to apply those for the package in unstable, before we have the
corresponding gcc-defaults package ready.  Not saying that we can't do it before
the bullseye freeze, but maybe we should start with this for GCC 11.

Starting with GCC 11 would allow us to drop the separate builds, and just use
the symlink approach consistently for gdc and gnat.
