apt-get install make-kpkg
Then you cd into /usr/src/ , bunzip2 and untar the source, make config (or
menuconfig or xconfig). Here comes the magic :)
make-kpkg --revision=<your version> kernel-image
Bear in mind that I don't use modules, and you'll need to read the manpage
should you ant to incorporate any Debian-provided patches. then it is a
simple matter of using dpkg to install the deb thats remained in /usr/src
